Lanzhou Beef Noodles, known as the hand pulled noodles in beef soup, is the most popular and economic local food in Lanzhou. It is said that the beef noodles were first cooked by Ma Baozi, a chef of the Hui nationality, in the year of Emperor Guangxu in the late Qing Dynasty. There are various shapes of noodles catering to customers’ tastes. If you prefer to the circular noodles, there are 5 kinds of choices differing in thickness; if you like the flat noodles, the noodles can be pulled into the widest, the wider and the leek leave-like; the chef can also pull the noodles into the shape of triangular resembling the fruit of buckwheat. Lanzhou beef noodles have five distinctive characteristics: the clear soup, white radish, red hot pepper, green garlic sprouts and caraway, and yellow noodles. Whenever and wherever you walk on the streets of the Lanzhou city on the shore of the Yellow River, you can smell the flavor of beef noodles.
